I recommend the Nantahala Outdoor Center's rafting trip. It is located in the very westernmost tip of N. Carolina, not too far from the border with Georgia. My favorite is riding down the Nantahala River (they have several rivers that they do) in their little one-man inflatables called "ducks."

The Nantahala's got a lot of class I and II rapids. I think the hardest is a high class 3 at the end. It's an easy enough trip for beginners to not feel overwhelmed, and hard enough that the more experienced rafters probably won't feel bored.

If you're hardcore, then this may bore you, though.

Don't forget to put some money in a ziplock baggie so you can stop a little past the half-way point and eat lunch. There are 2 or 3 shacks with different restaurants there, with a sign saying "We accept wet money!" I heartily recommend the one with the "BBQ Pizza." It's fantastic!
